A New Diet for Life

I lost 20 points in 2016.  Although I have gained it all back, at least it took 2 years for this to happen, I am on a mission to loose and keep it of forever. To me, this is called dieting for life.  I am doing this mainly because i know it is healthier for me and besides, the less I weigh the better I feel.  For starters, I am eating more veggies, fruits, and replacing one meal with a protein smoothie I create myself.  So far 3 pounds lighter and feeling pretty good.   In my research to be healthier, I have come across some recipes I would l like to share.  Here is one that is from the Mayo Clinic Diet and just in time for a cozy rainy night. 

Gingery Chicken Noodle Soup: Ingredients 3 ounces dried soba noodles 1 tablespoon olive oil 1 large yellow onion 1 tablespoon peeled and minced fresh ginger 1 carrot, peeled and finely chopped 1 clove garlic 4 cups chicken stock 2 tablespoons reduced-sodium soy sauce.

1 pound skinless, boneless chicken breasts, chopped 1 cup shelled edamame 1 cup plain soy milk 1/ 4 cup chopped fresh cilantro.   Preparation Boil water and then add noodles and cook until it is tender for about 5 minutes. Drain the noodles and set aside. Heat the onion in olive oil for about 4 minutes and then add ginger and carrots to sauté for another one minute. Add garlic and again sauté for 30 seconds, add the chicken stock and soy sauce to boil for about 4 minutes, add the soba noodles and soy milk and then cook until it is heated all through. Ladle soup into separate warmed bowls and serve immediately.
